AvailableThe LOC food service program shall be structured as a profit and loss (P&L) account(s) in which revenues from the operating areas will cover the contractor’s expenses, management and contractor profit. A small percentage of gross sales shall be used by the Contractor to benefit the services provided in this contract. In consideration for use of the Library-furnished food service facilities, the contractor shall maintain a commission reserve account of 1.5% of gross sales/receipts throughout all operations in the LOC to be used as directed by the Contracting Officer Representative (COR) with approval from the Contracting Officer (CO). (Tips and gratuities paid directly to employees are excluded from the calculation of gross sales/receipts.). See attached file.
